Round Peak produces a number of award-winning French and Italian wines and is one of only two NC wineries growing the coveted Nebbiolo grape. The tasting room includes a large covered back patio with seating area, mountain views and occasional live entertainment. Round Peak has two rental cabins in the vineyards. Round Peak&#8217;s dry and semi-dry wines are produced under the Round Peak label, while its line of semi-sweet and sweet wines are produced under the Skull Camp label. Its name is derived from the Italian word for fog, <em>nebbia<\/em>. Generally speaking, Nebbiolo is known for its high tannins, high acidity, and its aromas of red cherries, tar and rose pedals.\r\n\r\nLike all grapes, terroir is one of the largest factors when it comes to the expression of the grape along with the producer\u2019s production style. Fruit notes include red currant, cassis, black cherry, raspberry, strawberry, and cranberry - in other words, brighter, more high-toned berry notes. Those are balanced out by secondary notes of forest floor, limestone, cracked spice, violet, rose, tar, balsamic, and truffle.\r\n<h2><strong><a name=\"pairings\"><\/a>Nebbiolo Food Pairings<\/strong><\/h2>\r\nNebbiolo wines make for fun and relatively easy pairing partners alongside a variety of foods. High tannins, acids, and loads of complexity mean that these wines pair well with dishes that are equally as rich and decadent.\r\n\r\nConsider big-flavored meats and poultry, roasted veggies, and game. Try out porcini-crusted beef tenderloin with truffle butter sauce. Equally as tasty and perhaps a great side dish is a risotto with garlic and Parmesan. Both are always 100% Nebbiolo, with the king being\u00a0<strong><em>Barolo<\/em><\/strong>\u00a0and the queen being\u00a0<strong><em>Barbaresco<\/em><\/strong>. Just like you imagined, Barolo is the powerhouse with more tannin and structure, while Barbaresco is slightly lighter in tannin and more elegant in style.\r\n\r\nWithin these styles, there are two trains of thought when it comes to production. Some producers like to produce a more traditional style, which involves longer maceration times for more extraction from the skins and aging to take place in large Botti (large Slovenian oak barrels). These wines need much more time in the cellar before they will be ready to drink.\r\n\r\nThe other style comes from the modernist producers. These wines use shorter maceration times and will incorporate the use of Barriques (small French oak barrels). The idea behind these wines is to be ready to drink at a younger age. There is an argument for both styles, and we believe there to be a place in the market for both.\r\n\r\n<hr \/>\r\n\r\n<strong>RELATED:<\/strong> <a rel=\"noopener\" href=\"https:\/\/www.winetraveler.com\/destinations\/italy\" target=\"_blank\"><strong>Trending Destinations to Visit in Italy This Year<\/strong><\/a>\r\n\r\n<hr \/>\r\n\r\n<h3><strong>Other Nebbiolo Growing Regions<\/strong><\/h3>\r\nAlso located in the Langhe, you can find a more approachable expression \u2014 <em><strong>Langhe Nebbiolo<\/strong><\/em> \u2014 meaning the grapes can come from anywhere in the Langhe region. These wines are lighter in style with brighter fruit, less tannin, and are significantly less expensive. These wines are typically made from the younger Nebbiolo vines.\r\n\r\nMoving to the North is an area that\u2019s been gaining popularity over the years \u2014 <em><strong>Alto Piemonte<\/strong><\/em>. In this area you will find the communes of Gattinara, Lessona, Bramaterra, Ghemme, Boca, Fara and Sizzano. All produce wines typically with higher acidity that are very age-worthy. These wines are typically blended with Croatina, Vespolina, and Uva Rara. Nebbiolo here is known locally as Spanna.\r\n\r\nMoving even more North and West bordering Valle d\u2019 Aosta you\u2019ll find Carema \u2013 a light and dry Nebbiolo wine with high acidity. Its appellation is very small but definitely worth checking out.\r\n\r\nValtellina in Lombardy is another wonderful area for the production of Nebbiolo, boasting a rich and aromatic style with a nice structure and elegance. There are other areas in Italy that produce Nebbiolo but we find these to be the most important ones to focus on, for the moment.\r\n<h2><strong><a name=\"aging\"><\/a>How is Nebbiolo Aged? <\/strong><\/h2>\r\nDue to the high acid and tannins, Nebbiolo can age for decades. In fact, these wines are notoriously unapproachable when young because the acids and tannins have not yet settled in. Because of Nebbiolo\u2019s unique flavor profile, oak treatments are usually neutral as to not impart any toasty notes.\r\n\r\nAs Nebbiolo wines age, the color can fade to a tawny orange and the leather-licorice notes become more pronounced. It is the dominant variety in a number of Italian wines, usually named after their DOCG. In terms of wine styles, this variety is used in numerous red wine blends, especially <strong><a rel=\"noopener\" href=\"https:\/\/www.winetraveler.com\/italy\/chianti-itinerary-5-days-tuscany\/\" target=\"_blank\">Chianti<\/a><\/strong>.\r\n\r\nThere are at least 14\u00a0Sangiovese clones that we know of.\u00a0<strong>The most important one worth knowing is Brunello di\u00a0Montalcino<\/strong>, which is one of Italy\u2019s most famous wines.\r\n\r\nFor a time, Brunello was considered a separate grape variety. A deeper look at the grape\u2019s genetics revealed it too was Sangiovese. In 1980 Brunello di Montalcino was granted the controlled designation of origin guaranteed (DOCG), where this particular <strong><a rel=\"noopener\" href=\"https:\/\/www.winetraveler.com\/wine-region\/tuscany\/\" target=\"_blank\">Tuscan region<\/a><\/strong> is known to produce Italy\u2019s finest wines.\r\n<h3><strong>Notable Sangiovese Clones and Sub-Types are:<\/strong><\/h3>\r\n<ul>\r\n \t<li>Brunello of Montalcino (Clone)<\/li>\r\n \t<li>Sangiovese Grosso (also called Dolce, or Gentile)<\/li>\r\n \t<li>Sangiovese Piccolo<\/li>\r\n<\/ul>\r\n<h2><strong><a name=\"taste\"><\/a>What Does Sangiovese Taste Like? <\/strong><\/h2>\r\nSangiovese typically displays red fruit notes like red currant, ripe red cherry, cranberry, tomato, and strawberry. Earth and herbal notes can include limestone, tea leaf, forest floor, tobacco, mushroom, thyme, cracked red pepper, saddle leather, smoke, and herbs.\r\n\r\nThe Sangiovese grape adds gorgeous acidic structure and backbone when blended with a multitude of grapes, but it takes a skilled winemaker to master its use as the sole variety in a wine. Sangiovese vines tend to adapt to both hot and cold climates, and these various terroir-related adaptations can have a substantial impact on the aromatic and flavor profile of Sangiovese wine.\r\n<h2><strong><a name=\"pairings\"><\/a>Sangiovese Food Pairings<\/strong><\/h2>\r\nIt\u2019s impossible to talk about Italy\u2019s signature grape without mentioning the food! Sangiovese loves the dishes from its homeland, from pizza to pasta with tomato-based sauces to osso buco.\r\n\r\nSangiovese works well with cheeses because of its relatively high acidity levels, and it also can work with spicier dishes like barbecue. For vegetarian dishes, lean towards eggplant and lentils to allow Sangiovese to shine.\r\n<h2><strong><a name=\"terroir\"><\/a>Climate and Terroir for Sangiovese<\/strong><\/h2>\r\nWhile Sangiovese is grown extensively in Italy, other old-world countries within Europe grow a much smaller percentage of the vine.\r\n\r\nOn the other hand, Sangiovese has been found to grow very well in some new world environments, particularly in Argentina, <a rel=\"noopener\" href=\"https:\/\/www.winetraveler.com\/travel-resources\/best-texas-hill-country-wineries-visit\/\" target=\"_blank\"><strong>Texas<\/strong><\/a>, and California, where it responds well to the climate and limestone makeup of their respective terroirs. Limestone in particular seems to enhance the wine's unique mineral and earthy kick.\r\n\r\nSangiovese wine comes from high-yielding grape vines that thrive in porous, well-drained soil. Vines are often planted in shallow soil. Because the grape is usually high-yield, its quality can vary starkly. Sangiovese can grow vigorously, and in hot climates it\u2019s not uncommon for over 15 tons per acre of Sangiovese grapes to be produced.\r\n\r\nThese intense yields can sometimes lead to late-ripening and vitiate the quality of the end product. An imbalance in crop load will almost always delay ripening and result in a poor acidic and sugar balance. If you come across a good quality Sangiovese or Sangiovese blend, you can be fairly sure the winemaker is highly skilled.\r\n<h2><strong><a name=\"aging\"><\/a>How is Sangiovese Aged?<\/strong><\/h2>\r\nSangiovese is acidic, which means it can age very well. Brunello, for example, can age for decades on end and become richer and more mellow with time. Sangiovese can handle various types of oak treatment but the best help soften the acid without overwhelming the fruit with oak. Named for it's small, thick-skinned berries, this grape is valued for its depth of color and tannic structure. Petit Verdot wines tend to have a dense, inky, violet-black appearance due to high levels of anthocyanin (a trait that is sought after due to its abundant antioxidents). It is one of the few varieties that will look deep purple in the glass.\u00a0<\/p>\r\n<p>It is known for intense violet aromas and flavors, as well as black plum, black cherry and lilacs. The thick-skinned berries give this grape great tannic structure and it can achieve higher levels of alcohol due to its long growing period. This can give it a full and plush feel in the mouth. It also has a cedar and spice element that is amplified by oak aging. Many of these traits liken it to a Syrah in style.<\/p>\r\n<p>It once was one of the more important grapes for many Bordeaux wines in the Medoc during the 1700\u2019s, but eventually became scarce. Due to phylloxera in the late 1800's most of the Petit Verdot in The Left Bank was ripped up. Then what little Petit Verdot remained removed from the vineyards in Bordeaux following the frost of 1956. Petit Verdot began to reappear in California in the mid 1970\u2019s\u2014 mostly in the Mt. Veeder appellation. Today, this grape does really well in many places\u2014it's made a name for itself in Virginia, is being grown more and more across California and Washington. Argentina, Australia, Chile, Italy, Portugal and Spain have all been having success with this grape as well.\u00a0<\/p>\r\n<p>Of course it is still used in the famous Bordeaux blends\u2014the largest plantings of Petit Verdot in Bordeaux are probably located at Chateau Bolaire in the Bordeaux Superieur region, which will include up to 40 percent Petit Verdot in a cuv\u00e9e. Interestingly, there are a few small producers in Bordeaux making wines from 100 percent Petit Verdot. The most famous estate is located in the Haut Medoc, Chateau Malescasse, which produces Le Petit de Malescasse. It\u2019s a unique grape variety in that it\u2019s surprisingly aromatic and perfumy despite being a traditionally dry wine.
